Breakfast Quesadillas

A morning pizza!
  • 2 Small flour tortillas
  • 2 tablespoons Pasta sauce
  • 2 tablespoons chopped ham
  • 2 tbs. pineapple tidbits
  • 1/4 cup Shredded mozzarella cheese
  1. Spread half of each tortilla with pasta sauce; sprinkle with ham, pineapple, then mozzarella.
  2. Fold uncovered half over filling.
  3. Heat non-stick skillet over medium heat; cook the quesadillas for about 2 minutes per side or until filling is hot and cheese melted.
  4. You can also bake them in a toaster oven at 400 for about 8 minutes but you need to turn them once. Then cut into wedges. They're grrreattttt!

 


Riley's Juicy Fruit Breakfast Shake

Serves 2

 

  • 1 ripe banana, peeled
  • 1/2 cup orange juice
  • 1/2 cup lowfat yogurt (any flavor)
  • 2 kiwi, peeled and cut up

 

  1. Slice up the banana and put the pieces into a blender along with the juice, yogurt and kiwi.
  2. Put the lid on tight and blend until smooth.
  3. Pour shake into 2 glasses and drink it up!

 


 

Green Gobbling Fruit Salad

Serves 4 ravenous rabbits
  • 2 kiwifruit peeled and sliced
  • 1 Golden Delicious apple cored and cut into chunks
  • 1 pear cored and cut into chunks
  • 1/2 cup green seedless grapes
  • 1 8 ounce container Wegmans Lowfat vanilla yogurt
  • 1 tablespoon honey
  • Grated peel of 1 lime

 

  1. Mix all the fruit together; place in 4 bowls.
  2. In a small bowl, stir together the yogurt, honey and lime "zest" (the grated peel).
  3. Spoon the yogurt topping over each bowl of fruit and enjoy.
